Korean raw fish is hoe (회) — sliced thin and eaten with chogochujang, a sweet chilli-vinegar sauce, rather than soy and wasabi. At coastal markets you can buy fish downstairs and pay a small fee to have it prepared and served upstairs. After the raw course, the bones usually go into a spicy maeuntang stew.
